A "Standard Cut" half includes:
- 4-5 3.5 lb of Chuck Roast
- 2-3 3.5 lb Arm Roast
- 2-3 3.5 lb Top Round Roast (option to steak or grind)
- 9-11 Ribeye Steaks*
- 9-11 NY Strip Steaks*
- 4-6 Sirloin Steaks*
- 4-6 Sirloin Tip Steaks*
- 3-4.5 lbs Tenderloin/Filet*
- 70-100 lbs Ground beef
- 1 2lb Flank Steak
- 2 2-3 lb Briskets
- 6 lbs Stew Meat
- 1 4 lb Skirt Steak
- 3-4 1 lb Packs of Short Ribs
- Soup Bones
- Organ Meats
Optional roasts instead of ground are Bottom Round and Tri-Tip
*All steaks will be cut at 1" thicknesses and packaged in pairs. Filet will be cut at 1.5" thickness.
