    A "Standard Cut" half includes:

    • 4-5 3.5 lb of Chuck Roast
    • 2-3 3.5 lb Arm Roast
    • 2-3 3.5 lb Top Round Roast (option to steak or grind)
    • 9-11 Ribeye Steaks*
    • 9-11 NY Strip Steaks*
    • 4-6 Sirloin Steaks*
    • 4-6 Sirloin Tip Steaks*
    • 3-4.5 lbs Tenderloin/Filet*
    • 70-100 lbs Ground beef
    • 1 2lb Flank Steak
    • 2 2-3 lb Briskets
    • 6 lbs Stew Meat
    • 1 4 lb Skirt Steak
    • 3-4 1 lb Packs of Short Ribs
    • Soup Bones
    • Organ Meats

    Optional roasts instead of ground are Bottom Round and Tri-Tip

    *All steaks will be cut at 1" thicknesses and packaged in pairs. Filet will be cut at 1.5" thickness.
