  • We are currently unable to customize meat cuts for quarters. They come as a set, pre-selected curation of cuts. The following list is roughly what you can expect with slight variations in the amounts of each cut: 

    • 2 - 3.5 lb of Chuck Roast
    • 2- 3.5 lb Arm Roast
    • 2 - 3.5 lb Top Round Roast 
    • 2 - 3.5 lb Bottom Round Roast 
    • 4-6 Ribeye Steaks*
    • 4-6 NY Strip Steaks*
    • 2-3 Sirloin Steaks*
    • 2-3 Sirloin Tip Steaks*
    • 1-3 lbs of Filet*
    • 35-50 lbs Ground beef
    • 3 lbs Stew Meat
    • 1-2 1 lb Packs of Short Ribs
    • Soup Bones

    *All steaks will be cut at 1" thicknesses and packaged in pairs. Filet will be cut at 1.5" thickness
