A "Standard Cut" whole includes:
- 8-10 3.5 lb of Chuck Roast
- 4-6 3.5 lb Arm Roast
- 4-6 3.5 lb Top Round Roast (option to steak or grind)
- 18-22 Ribeye Steaks*
- 18-22 NY Strip Steaks*
- 8-12 Sirloin Steaks*
- 8-12 Sirloin Tip Steaks*
- 6-9 lbs Tenderloin/Filet*
- 140-200 lbs Ground beef
- 2 2lb Flank Steak
- 4 2-3 lb Briskets
- 12 lbs Stew Meat
- 2 4 lb Skirt Steak
- 6-8 1 lb Packs of Short Ribs
- Soup Bones
- Organ Meats
Optional roasts instead of ground are Bottom Round and Tri-Tip
*All steaks will be cut at 1" thicknesses and packaged in pairs. Filet will be cut at 1.5" thickness.
